Stuffed Bell Peppers

Ingredients:

  • 4 large bell peppers (choose any colors you like: red, yellow, orange, or green)
  • 1 pound ground meat (beef, turkey, or chicken all work well)
  • 1 cup cooked rice (white or brown rice)
  • 1 can diced tomatoes (about 14 ounces)
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • Salt and black pepper, to taste
  • 1 cup shredded cheese (cheddar, mozzarella, or a mix)
  • Fresh parsley, chopped (for garnish)
