Instructions
1. Prepare the spinach
- Heat olive oil in a pan.
- Add garlic, sauté 30 seconds.
- Add chopped spinach and cook until wilted (or just heat if using frozen).
- Let cool slightly.
2. Make the filling
Mix in a bowl:
- cooked spinach
- ricotta
- mozzarella
- feta
- salt, pepper, nutmeg
Stir until creamy and well combined.
3. Shape the pockets
- Roll out your puff pastry.
- Cut into squares (10×10 cm).
- Place a spoonful of filling in the center.
- Fold diagonally into triangles.
- Seal the edges with a fork (like in the photo).
4. Brush & bake
- Place on a baking tray lined with parchment.
- Brush with beaten egg.
- Bake at 200°C (400°F) for 18–22 minutes until golden and puffed.
