Apple Pie with Apple Mousse (Szarlotka)

### **Ingredients**

#### **The Dough**

* **1 block** of butter (approx. 200–250g)

* **1 cup** of sugar

* **3 cups** of flour

* **2 teaspoons** of baking powder

* **3 egg yolks**

#### **The Apple Mousse**

* **1.5 kg** of apples

* A splash of water

* Lemon juice

* Sugar (to taste)

* Cinnamon (to taste)

### **Preparation**

1. **Prepare the Dough:** Knead all the dough ingredients together until combined. Place in the refrigerator to chill for **2 hours**.

2. **Prepare the Mousse:** Dice the apples (keeping the skin on). Place them in a pan with a little water, lemon juice, sugar, and cinnamon. Cook for about **10 minutes** until you reach the desired consistency.
